How to make Gooey Caramel Popcorn

This snack is quick to make and very versatile even for apples, or on bread pudding or as the base for Bananas Foster…yummy! The brown sugar with the Smart Balance Butter Blend makes a caramel sauce that will help to lower cholesterol. Over popcorn, the caramel sauce will not totally crystallize (harden), but I prefer the gooey texture. Served slightly cooled on the popcorn, it is wonderful!

½ cup brown sugar
¼ cup water
4 T Light Smart Balance®
5 cups reduced fat popped popcorn, Jolly Time® 94% fat free or pop your own with an air popper (I like to use Jolly Time 100% Organic)
Optional ¼ cup almonds, soy nuts, dried cranberries, Kashi Go Lean Crunch cereal or chocolate chips

In a medium sized saucepan, add the brown sugar and water. With constant stirring, bring the brown sugar and water to a boil. Continue until sauce begins to thicken. Add the Smart Balance® and bring again to a boil to thicken.

Prepare popcorn according to microwave directions. Spread the corn onto a 10×13 inch baking sheet. Drizzle the caramel sauce over the corn. Mix to coat the corn completely. For a variety, add soy nuts, dried cranberries, almonds, Kashi Go lean Crunch cereal, or chocolate chips to the popcorn. Let cool. The caramel coating will remain slightly gooey and yummy!

Serves 5. Serving size: One cup of popcorn. Does not include almonds or added ingredients.
