DENVER -- There’s nothing like watching a football game with some great food and we’re helping you plan your broncos watch parties with recipes from some of Denver’s favorite chefs.
Rioja’s Chef Jen Jasinski prides herself on using the freshest ingredients to create a delicious dish, but that doesn’t have to apply only to fine foods. Chef Jen showed us how to make a party classic -- spinach artichoke dip -- and it’s those fresh ingredients that make all the difference.
Chef Jen’s Spinach Artichoke Dip
12 oz. fresh spinach (about 3 large bunches)
½ cup scallions, chopped
6 oz. cream cheese
6 oz. artichoke hearts, chopped
1 tbsp fresh dill, chopped
½ cup sour cream
Wilt spinach in a pan with a little olive oil. When done, squeeze out excess water and coarsely chop.
Place spinach in food processor with remaining ingredients and mix until smooth. Add salt and pepper to taste, and serve with choice of chips and fresh veggies for dipping.
