Travis Smith from Bistro Colorado shows us how to make a Barbecued Colorado Grass Fed Beef Brisket.

Barbecued Colorado Grass Fed Beef Brisket

Chile Powder (equal parts “1 cup” of dried chile arbol and chile anaheim.. you can add other chiles as you like.

Half the quantity “1/2 cup” of cumin powder, black pepper, and Kosher salt

1/2 cup Brown sugar

Rub the briskets and let set for an hour before smoking

Then smoke in a pellet smoker or a stand up smoker for about 6 hours at 200 degrees.

Serve with your favorite barbecue sauce recipe

The spice rub can also be used on chicken, salmon, or vegetables or by incorporating it into some other recipes you have for cole slaw or baked beans as shown here.

Spiced honey butter for Corn on the Cob:

1 Lb Softened whole unsalted butter

1/4 Cup Honey

1 Tbsp Barbecue rub  from the preceding recipe

 

Combine the ingredients and serve with sweet corn on the cob in place of plain butter

 

 

Spicy Cole Slaw

2 Cups shredded cabbage

1/2 cup shredded carrot

1 cup mayonnaise

1/8 cup apple cider vinegar

1/8 cup honey

1 tsp Barbecue Rub Spice Mix

1 Tbsp fresh chopped Cilantro

 

Combine all ingredients and then adjust seasoning to your desired taste

Baracho Beans 

2 Cans pinto beans

1/4 cup chopped onions

1/4 cup chopped bell peppers

1 tbsp minced garlic

1 tbsp Barbecue Spice Rub

1 Tbsp Chopped Cilantro

1/2 a beer

1/4 cup ketchup

Saute onions, peppers, and garlic until tender and add the remaining ingredients and then cook over the grill or in the oven for 30 minutes to combine flavors.
