Game day dish: 3 Broncos wives share their favorite recipes

DENVER — The wives of some of the Denver Broncos players have some great game day recipes, and they shared them with FOX31 Denver.

Leah Harris’ Artichoke Dip

1 can artichokes (roughly cut)
1 package cream cheese
1/4 c mayonnaise
1 small yellow onion (diced)
1/2 c shredded Parmesan cheese

Mix all ingredients in a round baking dish and cover with extra Parmesan cheese. Cook on 350 until lightly golden – about 30 minutes. Enjoy!

Stacy Clark’s Shrimp Pasta

1 lb shrimp (peeled and devined)
1 diced tomato
1 diced celery stalk
1/2 diced yellow onion
1 can Cream of Celery
1/4 cup heavy whipping cream
2-3 servings of boiled pasta (your choice)

Place onions, tomato, celery in a pan and cook on low. Add shrimp and simmer until shrimp finish cooking. Cook the cheese sauce in a small pot, whisking the cream of celery, whipping cream, and a few pieces of Velveeta cheese (or any other grated cheese you’d like to use).

Combine the pasta, cheese sauce and shrimp mixture. Top with chopped green onions and/or Parmesan cheese if you’d like!

Stephanie Johnson’s Monster Cookies

3 eggs
1-1/2 cups brown sugar
1 cup sugar
1 teaspoon corn syrup
2 teaspoons baking soda
1/2 cup butter flavored Crisco (or softened butter)
1-1/2 cups peanut butter
4-1/2 cups oats
1 cup semi-sweet chocolate chips
1 cup plain m&ms (orange and blue)

Directions:
Preheat oven to 350 degrees
Beat eggs in a large mixing bowl
Add all remaining ingredients and mix with an electric mixer until blended
Roll the dough into 1 to 2 inch balls and press down lightly in the center
Bake 10-13 minutes
