Daybreak Delights: Palisade Peach Muffins

Chef David Bondarchuck from Scratch Catering Services shows us how to make Palisade Peach Muffins.

Palisade Peach Muffins (Recipe Yields about 24 muffins)


What you Need:


3 3/4 cups all-purpose flour

1 cup granulated sugar

2 tsp. baking powder

1/2 tsp. salt

1/2 tsp. cinnamon

3 eggs

1 & 1/2 cups Half and Half

1/2  cup Vegetable oil

1 tsp. pure Vanilla Extract

3 fresh peaches-diced


Crumble top- What you Need:

1/2 Cup Flour

1/2 Cup rolled Oats

1/2 Cup Sugar

1 Stick unsalted Butter


What you Do:

Combine all dry ingredients in a bowl, stir together with a whisk.

In the bowl of and electric mixer, combine eggs, half and half, vegetable oil, and vanilla extract.

Mixing on low, slowly add the dry ingredients.

Once combined, fold diced peaches into mixture using a rubber spatula.

Using a scoop, fill baking cups lined in a muffin tin, scoop the batter into the cups

In a separate bowl combine Crumble top Ingredients and using a pastry blender cut the butter in until the mixture resembles crumbs

Using a Tablespoon, spoon the crumb topping over each muffin batter cup.

Bake pans at 400 for 18-20 minutes, Enjoy!
